Most of the AI texts address Vision also.

The Handbook of AI, Vol 3 Ch XIII and Vol 4 Ch XXIII provide excellent case studies as well as presenting most topics addressed in this course well.

Winston Artificial Intelligence, Tanimoto Elements of AI are well worth looking at also.
